Chicken Mulligatawny Soup
Ingredients:

3 tablespoons olive oil

½ cup chopped onion
-
2 stalks celery, chopped
-
1 carrot, diced
-
1 ½ tablespoons all-purpose flour
-
1 ½ teaspoons curry powder
-
4 cups chicken broth
-
½ apple, cored and chopped
-
¼ cup white rice
-
2 cups cooked chicken, shredded or chopped into cubes

1 pinch dried thyme
-
salt and pepper to taste
-
splash of cream (optional)
Preparation:

Heat olive oil in a pot over medium heat.

Add the onion, celery and carrot and sauté for a few minutes.

Add flour and curry powder, and cook 1-2 more minutes.

Add chicken broth and bring to boil. Simmer about 1/2 hour.

Add apple, rice, chicken, salt, pepper, and dried thyme. Simmer 15-20 minutes, or until rice is done.

Stir in splash of cream if using.
