Chicken Mulligatawny Soup

Ingredients:

  • 3 tablespoons olive oil

  • ½ cup chopped onion

  • 2 stalks celery, chopped 

  • 1 carrot, diced 

  • 1 ½ tablespoons all-purpose flour

  • 1 ½ teaspoons curry powder

  • 4 cups chicken broth

  • ½ apple, cored and chopped

  • ¼ cup white rice

  • 2 cups cooked chicken, shredded or chopped into cubes

  • 1 pinch dried thyme

  • salt and pepper to taste

  • splash of cream (optional)

 

Preparation:

  • Heat olive oil in a pot over medium heat.

  • Add the onion, celery and carrot and sauté for a few minutes. 

  • Add flour and curry powder, and cook 1-2 more minutes.

  • Add chicken broth and bring to boil. Simmer about 1/2 hour.

  • Add apple, rice, chicken, salt, pepper, and dried thyme. Simmer 15-20 minutes, or until rice is done.

  • Stir in splash of cream if using.
