Tuna Potato Patties

For 12 patties:

  • 300 g potatoes, boiled and cooled

  • 1 can (170 g) tuna in water, drained, flaked

  • 2 green onions, chopped

  • 1 egg

  • lemon zest from 1 lemon

  • 1/2 cup breadcrumbs

  • Salt and freshly ground black pepper

  • 2 tbsp olive oil

  • 1/2 cup breadcrumbs, for coating

For Garlic Aioli:

  • ½ cup mayonnaise

  • 1 clove garlic

  • ¼ teaspoon salt and pepper

  • 1 tablespoon freshly squeezed lemon juice

For the patties:

  • Mash the potatoes using a potato masher.

  • Add the tuna and mix with a fork. Add chopped green onions, egg and breadcrumbs.

  • Finally add lemon zest and season with salt and pepper. Stir well to combine.

  • Divide mixture into 12 portions. Shape them into patties. Place breadcrumbs on a plate and coat both sides of the patties. Place on a greased baking sheet.

  • Bake in a preheated 350F oven for about 30 minutes, flipping halfway, until golden.

For the aioli:

  • Place mayonnaise in a small bowl. Make a paste with the garlic and salt: using the flat side of a knife, crush the garlic, add salt and mash until a paste is formed.  Stir into the mayonnaise along with the lemon juice and black pepper.

Serve patties hot with garlic aioli!
