Sausage, Cabbage & Potato Skillet


For 4 servings:

  • 1 pounds sausage of your choice sliced into 3/4-inch pieces

  • 1 tbsp olive oil

  • 1 large onion, cut into slivers

  • 1 tbsp tomato paste

  • 2 tbsp apple cider vinegar

  • ½ head cabbage, chopped (about 5 cups)

  • 4 medium potatoes, peeled and cut into cubes

  • ¾ cup water or stock (chicken or vegetable)

  • Salt and pepper, to taste

  • ¼ cup chopped fresh parsley



  • In a large skillet, heat olive oil and cook sausage over medium heat until sausage is lightly browned. Stir in onions and cook 5 minutes longer. 

  • Add the tomato paste and stir to coat the ingredients.

  • Pour in vinegar to deglaze the pan. Cook, stirring, for 1 minute.

  • Stir in the cabbage, potatoes, chicken broth or water and bring to a boil. Add salt and pepper, to taste.

  • Lower to a simmer, cover and cook on low for 30 minutes or until the vegetables are tender. 

  • Stir in parsley and serve hot.
