Sausage, Cabbage & Potato Skillet
Ingredients:​
​For 4 servings:

1 pounds sausage of your choice sliced into 3/4-inch pieces

1 tbsp olive oil

1 large onion, cut into slivers

1 tbsp tomato paste
-
2 tbsp apple cider vinegar
-
½ head cabbage, chopped (about 5 cups)

4 medium potatoes, peeled and cut into cubes

¾ cup water or stock (chicken or vegetable)

Salt and pepper, to taste

¼ cup chopped fresh parsley
Preparation:

In a large skillet, heat olive oil and cook sausage over medium heat until sausage is lightly browned. Stir in onions and cook 5 minutes longer.

Add the tomato paste and stir to coat the ingredients.

Pour in vinegar to deglaze the pan. Cook, stirring, for 1 minute.

Stir in the cabbage, potatoes, chicken broth or water and bring to a boil. Add salt and pepper, to taste.

Lower to a simmer, cover and cook on low for 30 minutes or until the vegetables are tender.

Stir in parsley and serve hot.
