Easy Vegetable Quiche

Ingredients:​

  • 3 to 4 slices of bread (loaf type)

  • 1 tbsp (15 ml) vegetable or olive oil

  • 1 medium onion, thinly diced

  • 1 bunch of asparagus, cut into 1 inch pieces

  • 1 bell pepper (red, yellow or orange) cut into cubes

  • 6 large eggs

  •  ½ cup (125 ml - 125 g) ricotta, cream or milk

  • 1 cup (375 ml - 100 g) grated cheddar cheese

  • Salt and pepper, to taste

 

Preparation:

  • Preheat the oven to 400 ° F.

  • Line a 9-inch square baking dish with parchment paper.

  • Divide the slices of bread in the pan to cover the bottom. Place in the oven to toast for 10 minutes.

  • Heat a large skillet over medium-high heat and add the oil.

  • Brown the onions for about 2-3 minutes.

  • Add the asparagus, peppers, salt and pepper and cook, covered, for 5 minutes.

  • Pour this mixture over the bread slices.

  • In a bowl, whisk the eggs and add the ricotta. Then pour over the vegetable and bread mixture.

  • Top with grated cheddar.

  • Bake for about 20-25 minutes until the cheese is golden.
